Newer customers may be alarmed by the odd-looking root vegetable in their box. This is CELERIAC, a plant related to celery, but cultivated for its root rather than its stems. The leaves can be used (fresh or dried) as a seasoning for soups and sauces. Discard the stems.

The root should be peeled until it is smooth and white. You can then grate it and eat it raw as a salad (along with grated apple and carrot), or slice it and dice it and cook it in soups, stir-fries, or mash it with potatoes.
