Beets are a fantastic winter veggie -- they store well, they have terrific flavour, and they are extremely versatile... Yet, for many of us, they pose a challenge to our culinary creativity!
Beets will keep for weeks in the fridge, if stored properly. While we sometimes pack the beets in plastic to protect the bins from staining, they will store much longer if transferred to a paper or perforated bag.
Beets are not just for borscht!! Try beets grated into a winter salad, juiced with carrots, roasted, steamed, grilled, boiled, or even baked.
Deborah Madison, in Vegetarian Cooking for Everyone, recommends leaving the tail, skin, and at least an inch of the stems attached, to keep the valuable juices locked inside while cooking. Beets are easier to peel after they're cooked anyway, so just scrub them and cook them with their skins on.
