Ever have those leftover-blahs? You know the feeling when you make a big rice dish or stirfry and after a couple of meals, it begins to get repetitive and boring? Well, here is a quick and easy way to use up those never-ending leftovers - wrap them! Soft tortilla shells have a magical way of transforming a leftover dish into something new and delicious. Wraps can be served hot or cold for a unique breakfast, a quick lunch or dinner, or even a picnic.
Types of wraps
There are many different types of soft tortilla shells that are available. The traditional corn or wheat tortillas have been pushed aside to make room for the more unique flavours. For a tasty treat, try the new types such as sundried tomato, cheese, or spinach. For those who want to get a good source of organic whole grains (and a great source of a complete protein), try “Ezekiel 4:19 Sprouted Grain Tortillas” (found at Nature’s Fare).
Tips
Not everything can be thrown into a wrap. If you are making wraps with leftovers, be sure to avoid juicy dishes. Rice, noodles, egg, bean, and vegetable dishes work well. When making fresh wraps for on-the-go lunches, avoid using watery veggies, such as tomatoes, and sauces. Instead, bring them along in a separate dish - leaving them in the wrap all day will result in a very soggy lunch. Not only are wraps a quick way to use up leftovers, but they give us the opportunity to try out new and exciting dishes. Some of my favourite, more traditional wraps include burritos (refried beans, rice, salsa, cheese and shredded lettuce or celeriac). On Sunday mornings, my family enjoys Farmer’s Omelette Wraps (scrambled eggs, roasted potatoes, onions, salsa and cheese). Here are some other unique wraps to try out:
