Many people think of chard as part of the spinach family, but it's actually related to beets! My recommendation for preparing chard is to cut it in small pieces and steam it. This way you retain a lot of the nutrients. Dribble some cold-pressed flax oil, Bragg's liquid aminos (or tamari), and sesame seeds, and you're on your way to great health!
Cabbage Roll Look-Alikes
Lightly steam chard leaves to make them pliable, cut in half, and roll up with a rice + veggie mixture! (Lisa's note: lettuce leaves can also be used to roll up almost any mixture!)
Stuffed Green Peppers
Another creative use for chard! Cook rice (or any grain). Add some nuts, raisins, and spices (my favoirte mix is curry, cayenne, and cumin), chopped chard, garlic, and cheese (or nutritional yeast). Place pepper(s) in a deep-dish pan. Add a touch of water, and bake for 40 minutes, or until soft.
