Happy New Year everyone! With the start of a new year comes many New Year’s Resolutions. At the top of the list for many is the vow to eat right and lose weight. Many associate losing weight with eating very little. An exercise regime and a proper diet, which includes all of the necessary vitamins, minerals, and appropriate amounts of carbohydrates, protein, and fat, are essential for healthy living. Choosing the right foods and the right forms of exercise can be tricky. Remember, if we aren’t enjoying the food that we choose to eat, we are more likely to be tempted by those “unhealthy”, but tasty treats. Despite what some may believe, “comfort” food, such as casseroles, can be healthy and even low in fat. The following recipes provide those delicious “stick-to-the-ribs” meals that many of us crave during the winter season. They also provide protein and are low in fat for those looking to trim the waistline.
