What to Do with Leeks

Leeks are a great alternative to onions. They have a similar flavour, but lack the pungent odour and bite often associated with onions. Leeks come from many areas around the world, but they all have the same flat green leaves and tubular white stems. Leeks can last in the refrigerator, but don’t be surprised if they look bigger when you take them out. Leeks have the ability to continue growing even after being harvested.
To prepare leeks, cut off the top of the leaves and the bottom of the bulb. Remove the tough outer dark green layers of leaves and cut the white bulb and the lighter green leaves. They can be steamed, poached, braised, or added to almost any dish that calls for onions.
