Fava beans are a wonderful early summer bean. Also known as broad beans, they, like peas, are encased in a large pod. There are two ways to eat fava beans, depending on their age. When they are young and shiny, they can be eaten raw with the skin on. When they are a bit older and are a duller green, they must be skinned.
To skin fava beans, remove them from their pods, and drop them into boiling water for one minute. Drain and cool them, then use your thumbnail to open the sprout end and squeeze the bean out of its skin.
The best way to store fava beans is to keep them in their pods in the refrigerator until you are ready to eat them. If you would rather freeze them and save them for another time, they can be blanched, skinned and then frozen.
