A good hearty homemade soup is a wonderful way to embrace the Fall season. Soon, we will have pumpkins, squashes, and root vegetables. This week, we have beets, leeks, and Gem squash. Using these ingredients as a base, we can create wonderful, rich, warm soups.
The best thing about soups is their versatility. Soups can be used as appetizers or as main meals. They are low in fat, rich and creamy, or a mixture of both. They can be chunky or smooth, and served hot or cold. They are easy to prepare and easy to freeze for future meals.
Looking for an accompaniment for your hearty soup? Try a whole grain roll, a crisp fresh salad (fruit or veggie), or a slice of your favourite meat or veggie loaf.
