Pairing ingredients to combine flavours is a wonderful way to create new dishes. One way to discover exciting new pairs is to unite fruits with vegetables. Apples are a great start because of their variety of sweetness and tartness.
The next step is to find a vegetable that is compatible with apples. There are many vegetables that go well with apples. This week, we have fennel in our basket. Apples and fennel is a match made in heaven. The sweet crispness of the apples blends well with the fresh light licorice taste of the fennel.
Remember, use your fennel as soon as possible. It will only last in the refrigerator for a few days. It can be frozen, but that diminishes its flavour drastically.
