Sunchokes, also known as Jerusalem artichokes, are little tubers that resemble ginger root. They have a potato-like texture, but are suitable for low-carb diets and people with wheat allergies. Sunchokes also assist in blood sugar control and are suitable for diabetics. They are high in iron, thiamine, and potassium, and are low in fat.
Storing
Sunchokes should be stored in a cool, dry, well-ventilated, dark area. The best way to store them in the refrigerator is to wrap them in paper towels and seal them in a plastic bag. The paper towel absorbs the humidity and allows them to be stored up to three weeks. Canning or freezing is not recommended because the process can cause discolouration and deterioration of texture.
