Egyptian Fava Bean Salad

Totally vegetarian and ever so healthy!
Ingredients
1 cucumber, peeled and diced
1 lb cooked fava or red kidney bean
1 tomato, diced
1/2 cup chopped mint
1/2 cup chopped flat leaf parsley
1/2 red onion, finely chopped
1/4 cup tahini(sesame paste) mixed with 1 tbsp water
1/4 cup fresh lemon juice
2 garlic cloves, finely chopped
dash cayenne
salt and pepper to taste
lettuce leaves
Instructions
In a large bowl, combine all the ingredients except the lettuce. Serve at room temp in the lettuce leaves.
