6 Cups Chicken or Vegetable Stock6 Leeks (white parts only)½ C Onion (chopped)4 Medium Potatoes (peeled and diced)1 tsp Salt¼ tsp Pepper1 C Light CreamChives or parsley for garnish
Combine first 6 ingredients in large saucepan. Bring to boil. Cover and simmer for 30 minutes. Run through the blender and return to saucepan (Note: if you like it chunkier, only blend half the soup and then mix the two back together again).
Stir in cream. Heat through. Garnish with chopped chives or chopped parsley. Makes about 8 cups.
