1 Tbs Olive oil1 clove of Garlic1 small Onion9 oz Corn salad9 oz Potato2 Pears3 C Water3 Tbs light Cream2 pinches of CurrySalt and pepper
In a saucepan, heat olive oil and sauté the coarsely chopped onion and crushed garlic over low heat. Cook until the onion is translucent. Add the corn salad, peeled and cubed potatoes, seeded pears and water. Simmer over medium heat for 20 minutes. Add the cream and curry. Remove from the heat, season with salt to taste and blend until smooth.
