Ruby Red (Beet) Salad

Note: Arame is a type of sea vegetable which can be found in dried form in specialty health food or Asian food sections of stores.

Ingredients

2-3 beets, sliced into 1/8-inch thick rounds
2 med carrots, in thin julienned strips
½ cup dry arame + 1 cup water for soaking
4 cabbage leaves, sliced thin into bite-sized pieces
½ cup onion, sliced or diced
1 bunch parsley, chopped finely
1 Tbsp sesame oil (or extra virgin olive oil)
1 Tbsp rice vinegar
1 Tbsp tamari or umeboshi vinegar

Instructions

Steam thinly sliced beets until tender, about 5 minutes. Rinse and soak arame in 1 cup of water for 5 minutes. Drain out the soaking water. Dice steamed beets. Put them in a large mixing bowl with all the other ingredients. Stir and taste. Adjust the seasonings to your taste (add more vinegar or tamari), if desired.

Improvisations:
1) Add cooked brown rice, or udon or spiral noodles.
2) Try the following vegetables as additions or replacements: julienned cucumber, sliced radishes, chopped water chestnuts, slivered green beans, red onion, scallions, daikon, etc.
3) Instead of parsley, try this salad with lemongrass, basil, or cilantro for a refreshing twist!
