Mixed Garden Greens with Apples

This salad works especially well with early, tart, summer apples, but can also be prepared in fall and winter with later varieties.
Ingredients
¼ cp apple cider vinegar
3 Tbsp minced onion
2 tsp Dijon mustard
2 tsp honey
½ cp light olive oil
12 cups mixed torn greens
1 tart apple, quartered, cored, and thinly sliced
Instructions
Combine vinegar, onions, mustard and honey in a small bowl. Add oil and whisk until well blended. Add salt and pepper to taste. Combine greens and apple in a large bowl. Drizzle with dressing; toss to coat.
