Winter Grated Vegetable Salads

With lettuce prices high and availability low, what's a salad lover to do in the winter?! Grated winter veggie salads are bright, refreshing, easy to prepare and store, and require little dressing!

Ingredients

"Great grates" come from turnips, beets, carrots, kohlrabi, and celery root.

Celery, parsley, red onions, and other veggies can be sliced or diced in as well.

Sunflower seeds (roasted or raw) add protein and flavour, and if you toss it all in a pita or a wrap, you've got a quick lunch!

Turnips grated and tossed with sliced celery, and diced red onions, make a refreshing salad. Toss with enough Mustard Vinaigrette (below) to moisten.

Instructions

Mustard Vinaigrette:

Combine 2 Tbsp red wine vinegar, 2 shallots (diced), 1 garlic clove (minced), and 1/4 tsp salt in a small bowl. Let stand 15 minutes, then vigorously whisk in 1 Tbsp Dijon mustard, 2 Tbsp creme fraiche (or substitute), and 1/3 cup olive oil, until thick and smooth. Grind in a bit of pepper, then stir in 2 Tbsp chives, 1 Tbsp parsley, and 3 Tbsp capers (rinsed). Taste and adjust seasonings if necessary.
