Shaved Fennel & Apple Salad

Ingredients
2 Tbsp freshly squeezed lemon juice
1 Tbsp chopped fresh tarragon (or 1 tsp dried)
2 Tbsp extra virgin olive oil
2 Tbsp canola oil (or Hemp Oil)
Salt & freshly-ground black pepper
2 apples, peeled, cored, and halved
1 bulb fennel, thinly sliced
Instructions
Whisk together the lemon juice, chopped tarragon, and oils in a small bowl, and season to taste with salt & pepper.
Cut the apple into thin slices and place in a medium bowl with the fennel. Toss with the vinaigrette and season to taste with salt and pepper.
Serve over lettuce or mixed salad greens, and garnish with leafy fennel fronds.
