Creamy Italian Dressing (Vegan)

Ingredients
1/2 lb soft tofu or medium tofu
1/2 cup flax or olive oil
4 cloves minced garlic
1 large pickle, chopped
3 Tbsp vinegar
1/4 tsp dried oregano
1 tsp salt
1/8 tsp pepper
1/8 tsp red pepper flakes
Instructions
In a blender or food processor, blend together the tofu, oil, vinegar, salt and pepper until smooth and creamy. Fold in the garlic, pickle, oregano, and red pepper flakes. Excellent as a dip in addition to a salad dressing.
