Tabbouleh (Parsley Salad)

Here's a recipe from my own kitchen that is sure to please. Bulgur, a protein-packed grain, can be found in most grocery stores (often in the bulk foods section) or at health food stores.
Ingredients
2 C chopped parsley
1 onion (small)
1 tomato
½ C bulgar
3 C water
6 Tbs lemon juice
¼ C oil
Instructions
Boil bulgar in the water until soft, drain, and rinse in cold water. Chop veggies and mix with bulgar. Mix lemon juice and oil, add to mixture, and refrigerate for 2 hours.
