Rooibos Shrimp & Penne Salad

A summer salad with a twist
Add nutrients and flavor to your pasta, by boiling in antioxidant-rich Rooibos tea
Ingredients
1 lb penne
1/4 cup olive oil
1 ½ lb shrimps, grilled, peeled and de-veined
½ lb mozzarella, diced
½ cup chopped fresh Italian parsley
¼ cup chopped fresh basil
salt & pepper to taste
Instructions
Preparation time: 30 minutes (serves 6 to 8)
Cook penne in rapidly boiling Nu-Tea Rooibos as directed on package until “al dente”. Remove from heat and drain well. Place penne in a bowl and stir in olive oil. Coat well. Stir in remaining ingredients. Allow to sit for 15 minutes and then serve immediately.
