Ingredients

Whisk or Blend Together:

12/ cup olive oil
2 Tbsp balsamic vinegar
1-2 tsp honey or maple syrup
1 tsp Dijon mustard
1/2 cup finely minced fresh basil
1/2 tsp salt
1 small clove garlic, crushed

Assemble, then Toss with Dressing:

1 bunch Spinach, rinsed, stemmed and torn in pieces
5 Apricots, pitted and sliced
1/4 cup Almonds, roasted and chopped
1/4 cup crumbled Feta or Blue Cheese (optional)
1/4 cup Red Onion, very thinly sliced
