Kohlrabi Salad and Maple Vinegar Dressing

Ingredients
1 bulb Kohlrabi
2 leaves Lettuce
6 Orange wedges
1-2 Tbs Apple cider vinegar
1 Tbs Maple syrup
1 Tbs Olive oil
dash of Salt
1/4 tsp dry Mustard
Instructions
Whisk the vinegar, syrup, oil, salt, and mustard together. Cut off the leaves of the kohlrabi and discard. Remove the skin of the bulbs and any fibrous layer. Cut the bulbs into big chunks. Shred the chunks as if for coleslaw. Drain if necessary. Mix in the dressing. Place lettuce leaves in the bottom of the salad bowl. Pour the kohlrabi on top and garnish with orange wedges.
