Spinach and Citrus Salad with Purple Carrots

Ingredients

2 Oranges
2 tsp Honey
4 C young baby leaf Spinach
1 medium Zucchini, finely sliced
1 medium Purple carrot, washed and cut into fine julienne strips
¼ C toasted Almonds

Instructions

Using a serrated knife remove the peel and pith from both oranges, holding the orange over a bowl to collect the juice, remove the segments from the orange. Place the segments to one side and mix the honey into the orange juice to make the dressing.

In a serving bowl mix together the spinach leaves, zucchini slices, carrot strips and orange segments.
