Lisa's Sunny Quinoa Salad

Ingredients

3 C cooked Quinoa (or Couscous)
3 Apricots, chopped
1/2 small Red onion, minced
1/2 Yellow Pepper, diced
1/4 C toasted, chopped Almonds
2 Tbs each Chives, Parsley, Dill (minced)

Instructions

Toss together and pour over Honey Mustard Vinaigrette (your own recipe or store-bought version...a simple recipe can be made by blending together veg. oil, Dijon mustard, white wine, and/or apple cider vinegar, garlic, minced onion, wildflower honey, and salt and pepper to taste). Chill, and serve in a mound over a bed of fresh salad greens or lightly steamed chard, spinach, or kale; garnish with fresh herbs and thin curls of pepper.
