Brown Rice Vegetable Salad

Ingredients

1 2/3 C uncooked Brown rice
2 1/2 C Water
1 C Yogurt
1 Tbs Red wine vinegar
1 Tbs fresh Lime juice
2 tsp Honey
1/2 tsp ground Cumin
1/4 tsp Chili powder
1/4 tsp Salt
1/8 tsp Black pepper
1 C diced Red bell pepper
1/2 C chopped Cipollini Onions
1/2 C frozen Green peas, thawed
1/4 C toasted Almond slices
2 Tbs chopped Cilantro

Instructions

Place rice and water in a medium saucepan, and bring to a boil. Reduce heat to low, cover, and simmer 45 to 60 minutes. In a medium bowl, mix the yogurt, red wine vinegar, lime juice, honey, cumin, chili powder, salt, and pepper. Refrigerate until ready to use. In a large bowl, mix the rice, dressing mixture, bell pepper, onions, peas, almonds, and cilantro. Chill at least 1 hour before serving.
