Carrot and Date Salad
Recipe for Category Salads & Dressings

Ingredients
2 C Apples (or Apricots), peeled and diced
2 C Carrots, grated
1/4 C Pineapple, diced (optional)
2/3 C Dates, pitted and chopped
1 Tbs fresh Parsely, minced
1/2 C Orange juice
Dressing: can be used for almost any salad!
1 C Apple Cider Vinegar
1/4 C Olive oil
1/4 C Flax seed oil (or more olive oil)
2 Tbs Dijon mustard
Instructions
Mix all salad ingredients together. Add dressing to taste
