Apple Potato Salad
Recipe for Category Salads & Dressings

Ingredients
3 C cooked Red potatoes, whole or cut into chunks
2 Apples, unpeeled, cut into large chunks
2 Tbs fresh Lemon juice
2 Tbs light Mayonnaise
1 Tbs grainy Mustard
1/3 C fresh Parsley, chopped (2 tsp dried)
1/3 C fresh Dill, chopped (2 tsp dried)
2 Tbs Feta cheese, crumbled (optional)
Instructions
Combine all ingredients in a bowl. Cool and store in fridge until ready to serve.
Serves 5 to 6.
