Blood Orange Vinaigrette

Ingredients
1/2 C extra virgin Olive oil
2 Tbs Honey
1/4 C Blood Orange juice (about 2 blood oranges)
3 Tbs Champagne Vinegar or about 2 1/2 Tbs White wine vinegar
1 Tbs spicy brown Mustard or Creole mustard
Salt and freshly ground black Pepper to taste
Instructions
Combine all ingredients in a blender. Blend until smooth. Makes about 1 cup.
