Claytonia, Orange, and Watermelon Radish Salad with Poppy Lemongrette

Ingredients
1 bunch Claytonia, rinsed and spun dry
1 Orange, segments cut or peeled apart
1 Watermelon radish, very thinly sliced
1 Tbs freshly-squeezed Lemon juice
2 thin cross-section slices Red onion, chopped
Salt and freshly ground Pepper
1/2 tsp Poppyseeds
2 1/2 Tbs extra virgin Olive oil
Instructions
Pile the Claytonia, orange segments, radish slices, and chopped red onion into a salad
bowl. In a small bowl, whisk the lemon juice, salt and pepper to taste, and poppyseeds
together, then add the oil in a slow, steady stream. Dress the salad with the lemongrette
and serve immediately.
