Refried Black Bean Dip

Ingredients

2 tsp olive oil
1 small onion, finely chopped
3 cloves garlic, finely chopped
1 tbsp chili powder
1 tsp cumin
½ tsp cayenne
3 cups cooked black beans
1 cup water
salt and pepper to taste
1 tomato, seeded and diced
2 tbsp cilantro

Instructions

Heat oil in a large skillet. Add onion and garlic. Cook gently until fragrant and tender. Add chili powder, cumin and cayenne. Cook for 30 seconds. Add beans and combine well. Heat thoroughly. Mash beans with a potato masher or large fork. Add water to correct consistency. Add salt and pepper. Transfer to serving dish and sprinkle with tomato and cilantro.
