Vegetarian Gravy
Recipe for Category Dips, Spreads & Sauces

Ingredients
2 Onions
1 Carrot
1 Leek
1 Turnip
1 stick of Celery
2 Tbs Olive oil
4 C Water
Corn flour
Instructions
Prepare the vegetables and cut into thick chunks. Fry briefly in the olive oil then add the water. Bring to the boil and simmer for about 3 hours. Skim surface to remove any froth. Strain. To make the gravy, add a little corn flour (first mixed to a paste with a little cold water) and then season to taste.
