Harissa Sauce
Recipe for Category Dips, Spreads & Sauces

(This spicy Mediterranean sauce adds a wonderful warmth and flavour to many dishes. It can be purchased at most Specialty shops or made from the ingredients below)
Ingredients
1 C Water
6 oz dried red Chilis
9-10 cloves Garlic, peeled
½ C Salt
¾ C Coriander, ground
½ C Cumin, ground
1 C Olive oil
Instructions
Heat water until nearly boiling. Wearing gloves, remove the chili stems, cut chilis in half, remove seeds, and place in hot water to soften, 1-2 minutes. Place everything but the olive oil in food processor, start processing, and gradually add the oil until everything is incorporated into a red paste. Store extra sauce in the refrigerator.
