Spinach and Tofu Dip
Recipe for Category Dips, Spreads & Sauces

Ingredients
10 oz package frozen, chopped Spinach (or steam a large bunch of spinach)
1.4 oz package of dry Vegetable soup mix
12.3 oz package of firm silken Tofu
8 oz can Water chestnuts, coarsely chopped
1 Tbs Lemon juice
½ C shredded Carrots
2/3 C Green onion, chopped
2/3 C light Sour cream
Instructions
If using fresh spinach, wash, chop finely, and steam. Squeeze dry steamed (or thawed from frozen) spinach. Stir all ingredients together in a large bowl until blended. Cover and chill 2 hours. Serve with fresh vegetables or crackers. Makes about 4 cups.
