Red Onion Marmalade

Ingredients

1 Tbs Olive oil
1 1/4 lbs Red onions (about 4 medium), finely chopped
3 Tbs Balsamic vinegar
1 Tbs light Brown sugar
½ tsp grated Orange zest
2 Tbs Orange juice
½ tsp Salt

Instructions

In large skillet, heat oil over low heat. Add onions and cook, stirring frequently, for 15 minutes or until soft. Stir in vinegar, brown sugar, orange zest, orange juice, and salt. Cook, stirring frequently, for 15 minutes or until glossy. Preserve by placing marmalade in a glass jar and into a boiling bath for 10 minutes.
