Zucchini Egg Foo Yung
Recipe for Category Vegetable Side Dishes

Ingredients
2 med unpeeled zucchini, grated
2 eggs, beaten
¼ cp flour or ½ cp wheat germ
1/8 tsp garlic powder
½ tsp salt
½ onion, grated
Sauce:
½ cup vegetable stock
1 Tbsp soy sauce
½ Tbsp cornstarch
Instructions
Mix together zucchini, egg, flour, garlic powder, salt and onion. Drop by the tablespoonfuls into hot oiled skillet and fry, turning once, until golden brown on both sides. Combine remaining ingredients in a saucepan and cook, stirring, until thickened. Arrange zucchini patties on a platter and top with sauce. Serves 2 to 4. Recipe can be doubled.
