Fresh Corn Saute

Instructions
Slice kernels (see "Corn off the Cob" in the "Food Tips & Hints" category for instructions).
Melt a little butter or oil in a skillet, add a diced shallot (or onion), the corn, its scrapings, and 1 Tbsp water. Sauté until the corn tastes cooked, about 4 min. Season with salt and pepper. (For creamed corn, add ½ cp cream at the end and simmer until slightly thickened.)
