Coarsely grate 1 lb beets. Melt 1 Tbsp of butter (or olive oil) in a skillet, add the beets, and toss them with 1/2 cup of water. Then cover the pan and cook over medium heat until the beets are tender. Season with a little lemon juice or balsamic vinegar, and toss with 2 Tbsp chopped parsley, tarragon, dill, or other herb. Add a dab of yogurt, and serve!
