Braised Red Cabbage with Balsamic Vinegar

Ingredients

1 med red cabbage, chopped into 1-inch pieces
1 med onion, finely chopped
1 tsp olive oil
1 apple, grated
1/3 cup vegetable stock
5 Tbsp balsamic vinegar
Pinch of sea salt
2 tsp barley malt or sugar

Instructions

In a large pot, combine the cabbage, onion, olive oil, apple, and stock and bring to a boil. Reduce the heat, cover loosely, and simmer until the cabbage is soft, about 15 minutes. Stir in the vinegar, barley malt, and salt and continue to simmer until the cabbage is very wilted, 10 to 15 minutes more.
