Roasted Corn with Blueberry Relish
Recipe for Category Vegetable Side Dishes

Ingredients
2 Corn on the cobs, unshucked
1 large Jalapeno pepper, chopped finely
½ Red pepper, medium, diced
½ Red onion, medium, finely chopped
5 Tbs Lime juice
2½ Tbs Olive oil
2 Garlic cloves
¼ C Cilantro, chopped
1 C Blueberries, fresh/frozen
Salt and pepper to taste
Instructions
Soak unshucked corn in a large bowl of water for at least one hour. Heat barbeque. Roast corn until husks are charred, turning frequently, about 10 minutes. Shuck and cut from cob. Combine all ingredients in a large bowl. Season to taste with salt and pepper. Serve as a side dish to any summer meal.
