Delicata squash is another delightful and delicious winter squash. The difference between a summer and a winter squash is that a summer squash is picked while the skin is still tender and edible (like zucchini and sunburst squash). Winter squashes are picked when the skin is hard and inedible. Typically, winter squashes have a higher amount of iron, riboflavin, complex carbohydrates and vitamin A, although, summer squashes have an enormous amount of beta carotene.
Delicata squash is also known as the sweet potato squash. This bright, elongated squash has succulent yellow flesh that is thought to taste like a cross between butternut squash and sweet potato. Delicatas are available from late summer to late fall. They can be stored up to 3 weeks at room temperature. They are best baked or steamed. When preparing the squash, don’t throw the seeds out. All winter squash seeds contain a high amount of protein and can be roasted or pan fried for a delicious treat!
