Beets with Dill and Feta
Recipe for Category Vegetable Side Dishes

Ingredients
1 bunch Beets (4-5)
1/4 C Feta cheese
Juice of 1/2 Lemon
Olive oil
Fresh Dill, chopped
Instructions
Cook the beets in boiling water until just tender (not mushy). Remove skins and cut into small cubes. Place in a bow, drizzle with olive oil (not too much), lemon juice and dill to taste, toss. Sprinkle with crumbled feta cheese and serve.
