Curried Chard

Ingredients

3 lbs Chard, chopped
1 Onion, large, chopped
4-6 Garlic cloves, crushed
4 Carrots, medium, sliced
1 - 28 oz can Tomatoes, whole
1 - 15 oz can Chick Peas
3/4 C Raisins
3/4 C Walnuts, pieces
1 Tbs Olive Oil, extra virgin
Red Pepper Sauce, to taste
2 Tbs Curry Powder
Basmati Rice

Instructions

Dice the onion and crush garlic and place in a large covered baking dish. Add the olive oil and red pepper sauce and mix the ingredients together. Bake at 350º F until the onions become slightly translucent. Thinly slice the carrots and add to the onions and cook for another 5 minutes. Wash and chop the chard and add to the cooked onions, garlic and carrots. Pour the tomatoes (with juice) and chick peas (drained) into the baking dish. Add the raisins, walnuts, and curry powder. Mix well and bake until the chard is tender. Mix during the cooking process. Serve the curried chard over a bed of basmati rice.
