6 Beets, peeled raw, diced small4 Potatoes, peeled, diced large1 Onion, peeled, chopped fine2 C Water2 Tbs Butter1 Tbs Mint leaves, choppedSeasoning to taste
Put all ingredients, except the mint, in a stew pan. Cover. Let cook slowly about 35 minutes. Before serving, sprinkle with the chopped mint leaves.
