Grilled Fingerling Potatoes with Corn, Red Onions, and Garlic Curls

Ingredients

1/5 lbs Fingerling Potatoes
2-3 Garlic curls
1 cob Corn
1 Red Onion
2 Tbs Olive oil (or melted butter)
Sea Salt and fresh-ground Pepper
Minced jalapeno pepper to taste (optional)

Instructions

Scrub and chop the fingerling potatoes into bite-sized cubes. Wash, and chop the garlic curls into 1/2" pieces. Peel and cut the corn from the cob, using the back of the knife to scrape any extra corn/juices into a bowl. Dice the red onion. Toss all ingredients together in a bowl, then lay on a double layer of foil and seal into a package. Toss on the BBQ and serve when potatoes are tender.
