Apple Almond Stuffing

Ingredients

2 C chopped Apples
1 1/2 C sliced Almonds
3/4 C chopped Onions
3/4 C chopped Celery
4 Tbs Olive oil (extra virgin)
1 tsp Cinnamon
1/2 tsp Vegetable or Poultry seasoning
1/4 tsp Salt
6 C Whole Wheat Bread, cubed
1 C Raisins
1 Egg, lightly beaten
1/2 C to 3/4 C Apple cider or juice

Instructions

Saute apples, almonds, onion and celery in oil. Remove from heat, add seasonings. Toss with bread cubes and raisins and the apple mix. Stir egg into apple cider; toss into bread mix. Bake in a casserole dish for 30-45 minutes at 375F (covered). Makes about 10 cups.
