Salade Nicoise
Recipe for Category Vegetable Side Dishes

Ingredients
2 C Potatoes
1/2 lb Green beans
Dressing:
1/4 C Vinegar
1 tsp Dijon Mustard
1 tsp Black Pepper
1 Garlic clove, minced
1 tsp dried Basil
3/4 C Olive oil
Whisk together the dressing. Bring water to a boil and steam potatoes until firm, but tender. Steam green beans. Rinse and cool both potatoes and green beans.
Place in large salad bowl the following:
1 Red Onion, quartered and sliced
1/2 C Black Olives, in pieces
1/4 C freshly chopped Parsleyi
1 Green Pepper, diced
1 small jar marinated Artichokes
1 Romaine Lettuce, in bite-sized pieces
Instructions
Add salad dressing, potatoes, and beans, and toss gently.
