Slow Roasted Tomatoes

Ingredients
8 large Tomatoes
4 Tbs Salt
3 Tbs fresh ground Pepper
1/4 C Sugar
3 Tbs dried Thyme
2 Tbs Olive oil
Instructions
Slice tomatoes thickly, about three slices per tomato. Mix spices and sugar. Brush tomatoes with olive oil, and sprinkle with the seasoning mixture. Roast 3 hours @ 250°F.
