Jumped Greens (a side dish)
Recipe for Category Glorious Greens

Ingredients
1–2 lbs greens (Chard, spinach, or other greens)
4 quarts water
2-3 garlic gloves, chopped
4 tbsp olive oil
Pinch of fine sea salt Dried red pepper flakes to taste
Instructions
Wash, remove the stems and cook the greens in salted water for 3-5 minutes. Remove with a slotted spoon and rinse with cold water in a colander. Squeeze excess water from greens and roughly chop. Place garlic and oil in pan over medium heat. When garlic begins to sizzle add the pepper. Cook until garlic begins to colour. Add the greens and ˝ cup green’s cooking water. Stir-fry on high for 3 to 4 minutes until water is absorbed. Remove from heat, add remaining oil and stir to combine.
