1 Onion, large, diced2-3 lbs Swiss Chard, chopped1 6-oz. can Olives, ripe, pitted, sliced½ Tbs Olive OilBlack Pepper, ground ORHot Red Pepper Sauce (to taste)2 C Brown Rice, raw
Cook rice in 3 ¾ C water. Sauté onions and Swiss chard in the oil until the chard is wilted and the onions are tender. Add the sliced olives and black pepper or red pepper sauce and mix thoroughly. Add rice and toss entire mixture together. Serve warm.
