Amaranth, Corn & Bean Medley
Recipe for Category Main Course Dishes

Ingredients
1 Tbs Olive oil (or equivalent)
2 large Garlic cloves, thinly sliced
˝ tsp Oregano
1C Amaranth (available at Nature’s Fare for $4.68/500g)
3 C of Vegetable stock
ľ C fresh or frozen Corn
ľ C Beans (kidney or pinto work well)
Ľ C fresh Parsley (minced)
Ľ C Green onions or chives
sea salt and pepper to taste
Instructions
In a saucepan, sauté the garlic in the oil. Add the oregano and amaranth and sauté for a few more minutes. Add vegetable stock and bring mixture to a boil. Reduce heat and add the remainder of the ingredients. Boil gently until thickened (approximately 45 minutes). Serves 4.
